[Molasses Snappy Crinkle Sandwich Cookies]
I was invited to a cookie exchange. I love to bake, but not to bake literally all day long. :D But it all turned out in the end. Shoo...I have so many yummy treats in my house now because of all my labor. :D The cookies I brought were yummy, and looked yummy to boot. So, I thought I'd share the recipe. They are quite easy, peasy if your making only one batch, but I made four batches. Doesn't sound like much, but mercy, it was ca-razy! I made 12 dozen cookies...then made them into sandwiches. I used my friend Mary's recipe for the creamy center. I think that's my favorite part. ;D Yum! I only actually got to try one, and not even a whole one...I split it three ways with Meg, Ty, and myself. It was yummy! James was a wee bit upset, he wanted one. Only one extra, and he was at work. So sorry honey! I think I might have to make one more batch. Oh, and I finally got to use my special candy cane sprinkles. I lurve them. They are so cute! Anywho, make these and your family will have a "merrier" Christmas. Yup!

[Molasses Snappy Crinkle Sandwich Cookies]
3/4 c of softened butter
1c light brown sugar (packed)
1 egg
1/4c Unsulphured Molasses
2 1/4 c of flour
2 tsp. baking soda
1/4 tsp salt
1/2 tsp. ground cloves
1 tsp cinnamon
1 tsp ginger
Mix butter, sugar, egg, and molasses. Stir in remaining ingredients. Heat oven to 375. Roll dough into balls the size of a quarter, dip the tops in sugar. Place sugared side up on baking sheet. Sprinkle the cookies with water. Bake 10 minutes. This recipe makes about 4 dozen.
[Mary's Cream Cheese Filling]
4 ounces cream cheese, at room temperature
6 tablespoons butter, softened
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
Beat cream cheese, butter and vanilla extract in small mixer bowl on medium speed until fluffy. Gradually beat in powdered sugar until light and fluffy.
You made add whatever sprinkle you want to add a festive touch. :D Yay, for my candy cane sprinkles!!
Ty insisted that his "bad guy" get a picture with the cookies. :D
