[Amadiz Style Lasgna]
Lasgna (Amadiz Style)
Pretty sad, I had only made lasgna like once during James & mines many, many years of marriage. It always seemed like too much. And cooking, baking, etc. with too much is not fun. I guess I've matured and moved on to bigger and better things. :) Dayza made my family this meal right after I had Alana. We enjoyed it so, so much! It was way yummy. So, I asked for the recipe. She sent it. I made it. Wow, it really wasn't that difficult. :) And plus it was yummers. I used cottage cheese instead of ricotta cheese, I like the lumps and clumps of cheese. Next time, I'm going to try the very much sought after italian sausage, instead of beef. I'm excited. Plus this recipe had lots of leftovers! Yay for leftovers! Hope you enjoy this as much as I did! 1 box Lasagna noodles
2 eggs
1 container ricotta cheese (the 15oz. one)
4 cups shredded mozarella, divided
1/2 cup grated parmesan cheese
1 lb ground beef (or you can use ground sausage or turkey, or eggplant and zuchini :)
Marinara sauce, (homemade or 2 jars of store bought) I use store bought ;)
Preparation
Preheat oven 375 F. Spray baking pan (I use 13 x 9 x 3inches, you can change that just adjust how many layers you use) with non stick spray. In bowl beat eggs, then stir in ricotta, 2 cups mozarella and parmesan.
For the meat I put 1 tsp. olive oil in a saute pan and some garlic.....I let it saute for a few second....(not too long or else the garlic will burn and taste yucky.) As soon as that garlic starts to sizzle add meat and blend garlic in to it as you are breaking down the meat. While it's cooking I add oregano, crushed basil and salt and pepper to taste (I like my meat well seasoned) :)
Then just assemble Lasagna....
1. Spread sauce
4. layer sheets, remaining cheese mixture and meat and 1 cup sauce
5. layer sheets, remaining sauce and remainig mozarella
Bake, covered with foil for 50 to 60 minutes. uncover and continue cooking until cheese is melted about 5 minute)

Mmmm...I love lasagna. Made two the other day for my freezer. I think I could eat lasagna everyday.
