[Blueberry Goodness]

So you see, I'm a bit obsessive over a good blueberry muffin. It all started when I was pregnant with Alana. I craved them. Ate tons of them. Growing up you wouldn't catch me eating one. It had fruit in it. Yup. I'm pretty much picky. I liked fruit and all, just not in things. I grew up, I guess, when I was expecting. I would buy blueberry box muffin mix. Never "homemade", always from the box. That was fine with me, just fine. That is, until I tried real "homemade" ones. Yowwzers. How super delicious they are. By all means, I'll still eat the ones from the box, but homemade ones totally, simply are the best! Thanks Heather, for making me realize this!

So, here is the recipe. Nice and easy. 

1 3/4 cups all-purpose flour

1/3 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 beaten egg

3/4 cup of milk

1/4 cup cooking oil

1/4 teaspoon vanilla extract

1/4 teaspoon lemon juice

3/4 cup of blueberries

Extra sugar for sprinkling on top

Grease the muffin cups. Mix dry ingredients first. Then add wet ones. :) Place large spoonful of batter into muffin cups. Sprinkle with sugar. Place in preheated oven (400 degrees)  for 20 minutes. 

When they come out the oven let cool down for a short time. I think they are best hot, with a big ole slab of butter in the center! Mmmm.
