White Chicken Chili
This is so yummy. {never ever, ever had white chicken chili} James agreed that this was delish! A must try recipe. Got the recipe from my TOH magazine. I heart my TOH magazines!
3 cans (15-1/2oz. each) great northern beans, rinsed and drained
3 cups cubed cooked chicken breast {I used uncooked chicken breast}
1 jar (15 oz. Alfredo sauce)
2 cups chicken broth
1 to 2 can (4 oz. each) chopped green chilies {I left these out}
1-1/2 cups frozen gold and white corn
1 cup (4oz.) shredded Monterey Jack cheese
1 cup (4oz.) shredded pepper Jack cheese
1 cup sour cream
1 small sweet yellow pepper, chopped {I left these out, hubby dislikes peppers. :) }
1 small onion, chopped
3 garlic cloves, minced
1 tbsp. ground cumin
1 1-2 tsp white pepper {I used black}
1 to 1/2 tsp. cayenne pepper
Salsa verde {I used regular salsa} and chopped fresh cilantro {it says optional, but such a must ;) }
This is how I made it:
In a slow cooker, I put uncooked chicken breast in with the chicken broth, garlic, onion, and spices, then I let that simmer until chicken was throughly cooked. Then I added the rest of the ingredients and let cook for 3-4 more hrs. The results were fab!!!
This is how they say to make it:
In a slow cooker, combine the first 15 ingredients. Cover and cook on low for 3-4 hours or until heated, stir once. Serve with salsa and cilantro if desired. :)
