Layered Mexican Bake

This was a hit with my family. :) We love almost anything Mexican. You should try it, it is easy and something that doesn't take very long to make. This came out of my last issue of Kraft foods Food & Family magazine. It used to be free, now they are making you buy it. I might think about subscribing, and paying because they always have quick, easy, yummy recipes. Here is the link to a better picture for this recipe...{click here}

Ingredients:
3/4 lb. extra-lean ground beef
1 onion, chopped
1 green pepper, chopped {I went light on the peppers because my hubby} :)
2 tsp. chili powder
1 1/4 cups salsa
1 pkg. (10 oz.) frozen corn
3 whole wheat tortilla shells
1/2 cup Sour Cream
3/4 cup shredded cheddar cheese, divided
extras: cilantro and green onion, to your liking

Directions:
Heat Oven to 375F

Brown meat with onions and peppers in large skillet on medium-high heat. Stir in chili poweder; cook 1 min. Add salsa and corn; mix well. Simmer 5 min.


Spread 1 cup meat sauce onto bottom of 8- or 9-inch square baking dish; top with layers of 1 tortilla, 1/2 cup meat sauce, sour cream and 1/4 cup cheese. Cover with 1 tortilla, 1 cup of remaining meat sauce and 1/4 cup of remaining cheese; top with remaining tortilla and meat sauce. Cover with foil.


Bake 25 min. or until casserole is heated throuch. Top with remaining cheese; bake , uncovered, 5 min. or until melted.


Special extras: Garnish with chopped cilantro and green onions just before serving.


This was a ooey-gooey-cheesy- cilantro tasting goo of yumminess. A MUST try! :) I am so for real.
