My Momma's Enchiladas


Oh Mama Mia...these babies are so tasty and yummy! This recipe is going to be handed down to my kids, and to their kids...and so on! Everyone always loves these when my mom makes them! They are wonderful. Several people have asked for this recipe because it is so tasty! You have gotta try this recipe!

The recipe is as follows:

1 pk Large Tortilla Shells
3/4 c of Mexican Cheese (for sprinkling over top right before baking)

Sauce:

28oz. Tomato Sauce
1 Packet Taco Seasoning
1tsp Red Pepper Flakes
1c water

Enchilada Filling:

4c cooked shredded white chicken (took the chicken from a whole chicken)
3c shredded Mexican cheese
1c Sour Cream
1/2 Medium Onion (sauteed)
1Tb Parsley
1/4tsp black pepper

Make Sauce; Sautee onion; Mix enchilada filling over the stove set on medium heat; Line a pan with sauce; dip tortilla shells in sauce (both sides), then fill with 1/2c of filling, roll up and place seamed side down in the pan; when finished spoon sauce over the pan of enchiladas (apprx. 1/2c), sprinkle with cheese; Bake on 350 for twenty to thirty minutes. Top with Sour Cream. Enjoy.

**Use leftover sauce to put on enchiladas while eating, also we top with a dollop of sour cream...and some mean screamin hot sauce**
