Creamy Chicken Enchiladas

Okay, is this becoming a habit... me trying new meals?? Well, I really enjoy cooking...am I good at it, well, not really...but I do enjoy it. So, yes...I guess.=) This is a new recipe I just tried, yet again from the magazine..."Taste of Home". It is really yummy and creamy! Here is the recipe:
1 package (8oz.) cream cheese, softened
2 tablespoons water
2 teaspoons onion powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
5 cups of diced cooked chicken
20 flour tortillas (6in), room temp.
2 cans (10-3/4 oz each) condensed cream of chicken soup, undiluted
2 cups (16 oz) sour cream
1 cup milk
2 cans (4oz. each) chopped green chilies
2 cups (8oz.) shredded cheddar cheese
In a large mixing bowl, beat the cream cheese, water, onion powder, cumin, salt and pepper until smooth. Stir in chicken.
Place 1/4 cup down the center of each tortilla. Roll up and place seam side down into a greased baking dish. In a bowl, combine soup, sour cream, milk, and chilies; pour over enchiladas.
Bake, uncovered, at 350 for 30-40 minutes or until heated through. Sprinkle with cheddar cheese; bake 5 minutes longer or until cheese is melted. Yeild: 10 servings.

1 – Sarah is an extraordinary cook (which, by the way, makes it hard to maintain the waist size but I am still holding out don’t know how long but staying motivated – Oorah)
2 – The meatball calzones were tremendously tasty
3 – The creamy chicken enchiladas were superlatively scrumptious
4 – She is all that and a bag a zesty dorito chips…and them some…

We went to a park to take those pictures, well its really a restaraunt but has all this cool stuff to use for taking pictures.
You are doing really good taking pics also-you should start a business, too!! Too bad we don't live near each other, we could take pictures of each other's families! :o)
